These are so beautiful! These plums are definitely pucker-inducing at first, but I found that when I let mine sit on the counter for a few days, they started to turn a little pink in spots, and became a bit sweeter too, as you described. I recently used my Ontario yellow plums on grilled skewers with chicken and red onion - the recipe is here if you're interested: bit.ly/MHtx8M . Yay for Ontario produce! :)

Great ideas Lynn. I make jam with 2 cups chopped yellow plums and 2 cups raspberries...less seedy, nic colour and really tasty. Added a splash of Soho Lychee Liqueur to some and is amazing.
