    These are so beautiful! These plums are definitely pucker-inducing at first, but I found that when I let mine sit on the counter for a few days, they started to turn a little pink in spots, and became a bit sweeter too, as you described.     Great ideas Lynn. I make jam with 2 cups chopped yellow plums and 2 cups raspberries...less seedy, nic colour and really tasty. Added a splash of Soho Lychee Liqueur to some and is amazing.
